Huangshan
Maofeng Tea
Huangshan Maofeng Tea, formerly named Huangshan Cloud Tea,
started in Guangxu Period in Qing Dynasty, was listed as
Top Ten National Famous Tea.
It grows in Huangshan Scenic Area, Yixian County and Shexian
County. But the best quality tea grows in Forest Valley
Nunnery, Suspension Bridge Nunnery, Cloud Valley Temple,
Peachblossom Peak. Laba Toufu (bean curd)
Laba Toufu, a local food of Yixian County, laba refers
to December 8th in Chinese lunar calendar. Every family
will dry bear curd around
that day.
Process: the golden and salted bean curd is dyried in
mild winter sun. Finished product is golden, runny, salty
and savory. It is better if join some dried and small
shrimps as ingredients when it is drying. Laba Toufu is
well preserved in ventilated place for three months. It
can be either cooked alone, or stir-fried and braised
with meat. The local people carve it into animal or flower
with some condiments for distingue guest.
Salted Mandarin Fish
The Representative of Hui-style cuisine with the special
process, according to the legend, two hundred years ago,
the peddlers along the Yangtze River carried
mandarin fish in buckets to Huizhou mountain area, the
trip took seven to eight days so they put salt into the
buckets in order to preserve the mandarin fish. When arrived
in the destination, the fish was still well persevered,
this made the fish carry the special flavor. After cooked,
the fish is to a cate.
Process: salted the fresh mandarin fish around the 25¡æ(77¨H)
environment for six to seven days, then fried with sliced
meat, bamboo shoot, it is a delicious food, the name matches
the reality.
